Easy Rocky Road
This is a good way to use up some of your Easter chocolate!
200g digestive biscuits, rich tea would also work
135g butter of margarine
200g chocolate of any kind
3 tablespoons of syrup
100g of mini marshmallows or large ones chopped up
50g dried apricots
The list is endless! As long as you only use 100g in total. For example, you could use 25g of at item 4 times.
Grease and line an 18cm square tin with baking paper.
Place 200g of the digestive biscuits in a freezer/sandwich bag and bash with a rolling pin or just use the side of your fist until they are broken into a mixture of everything between dust and 50p sized lumps. Then set to one side.
In a large saucepan melt 135g butter or margarine, 200g chocolate and the 3 tablespoons of syrup on a gentle heat until it has all melted. Remove from the heat and leave to cool.
Take the biscuits, marshmallows and your chosen 100g additional ingredients and stir into the chocolate mixture until everything is completely covered.
Tip the mixture into the lined baking tin, spread in to the corners. Chill for about 2 hours then cut into 12 fingers and dust with icing sugar.
